Dragon well green tea, also called long jing, is a popular type of Chinese green tea. It's characterized by its flat, long leaves and its light, grassy flavor. Dragon well green tea is grown in the Zhejiang province of China and has a history dating back over 1,000 years.
What sets dragon well apart from other types of green tea is its method of production. Dragon well tea leaves are heated immediately after they're picked using a wok or a pan. This step prevents the leaves from oxidizing and preserves their bright green color. The leaves are then rolled into their signature long, flat shape.
This wild dragon well green tea is harvested once a year in spring. It is handpicked from wild tea trees grown high up on the mountainous terrain of Zhejiang province. This rare wild dragon well also has an exquisite appearance which can be seen from its leaves. Because it's a wild green tea, it also means it's naturally organic.
When making gongfu brewing, use 2 grams of leaves with 190ºF water and steep for about 20-25 seconds on the first infusion. Drop the steeping time to about 5-10 seconds on the second and third infusions.
After the first infusion, it produces light yellowish liquor with a slightly grassy aroma and wonderful sweetness that lingers on your tongue for quite some time after drinking. Its long aftertaste makes it enjoyable even hours after you finish the cup.
